The cocktails

The list riffs on classics such as the Old Fashioned and the French 75 and changes with the season, using local ingredients where it can. The Carrington Club is named for Leonora Carrington, whose sculpture is part of the hotel's art collection, and there is a short list of zero-proof cocktails alongside Colorado and imported beers.

Food from the bar

The all-day menu is built for sharing or a light dinner: a Colorado cheese board, whipped feta with pita, soups and salads, a wagyu smashburger, a prime rib French dip and flatbreads. It comes from the same kitchen as the hotel's breakfast and in-room dining.

Music and game days

Local musicians play jazz, folk, blues and classics in the winter season, and the hotel says live music returns in December. Through the fall, the bar shows football on Thursdays and Sundays. The FAQ has current days and hours, which change with the season.

Inside The Sebastian - Vail

The Sebastian - Vail is the Timbers Resorts hotel that runs The Gambit Bar.

Zuma Vail is the contemporary Japanese restaurant on the hotel's upper level, with sushi and robata counters, a lounge and a DJ booth. Book through Zuma directly.

Bloom Spa is the hotel's full-service spa, open to guests and visitors by appointment.

Breakfast at The Sebastian and in-room dining are the hotel's own guest dining, from the same kitchen as the bar.
