Zuma Vail brings the Zuma group's contemporary Japanese cooking to Vail Village. It sits inside The Sebastian on Vail Road and opened for the summer 2026 season.
Zuma describes its food as authentic but not traditional: plates made for sharing, drawn from three kitchens, the main kitchen, the sushi counter and the robata grill. It suits a celebration dinner, a group that likes to order across the table, and anyone who wants a livelier night out than a hushed dining room.
The food
Salmon and tuna tartare with oscietra caviar and rice crackers is a signature, alongside black cod marinated in saikyo miso and wrapped in hoba leaf, and charcoal-grilled robata skewers such as pork belly with yuzu mustard miso. A seat at the sushi counter puts you in front of the open kitchen. Desserts take cues from the mountains, like a maple cheesecake with huckleberry.
The room
The space holds a main dining room, a bar and a DJ booth, and Zuma plans to make it an après-ski stop once the lifts are running. The Sebastian sits at the western edge of Vail Village, on Vail Road.
Before you book
