Lunch and dinner

Del Toro runs two menus: lunch until mid-afternoon, then a dinner menu from 3:30 p.m. The dinner menu adds a dedicated seafood section to the appetizers, soups and salads, chef's taco specials and house specialties that both menus share, and both finish with desserts. Because there is no break between the two, it is one of the easier places in Vail for a late lunch or an early dinner.

Where it is

The restaurant is in the Highline Vail building in West Vail, away from the pedestrian villages, so most diners arrive by car or from a room upstairs. Hotel guests can use the hotel's on-demand shuttle during the day and come back to dinner without moving the car.

At Highline Vail

Highline Vail – a DoubleTree by Hilton is the West Vail hotel at 2211 North Frontage Road West that houses Del Toro. It has residential loft suites and runs a complimentary on-demand shuttle for its guests.

Pivot62 is the hotel's lobby lounge and restaurant, with brick-fired pizzas, shareable plates, wine and cocktails by the fireplace. Ask the front desk for current hours.

Westside Café, which adjoins the hotel, serves scratch-made American breakfast, lunch and dinner to hotel guests and locals.

Made Market is the hotel's 24-hour market for grab-and-go groceries. It has no VailVacay listing.
