About
Makoto Vail is chef Makoto Okuwa's Japanese restaurant inside the Grand Hyatt Vail on Westhaven Drive, west of Lionshead near Cascade Village. Okuwa trained under a sushi master in his hometown of Nagoya, later worked as head sushi chef for Masaharu Morimoto, and runs restaurants in Miami, Washington, D.C., Panama City, Mexico City and São Paulo. Makoto Vail, which opened in February 2024, is his first in Colorado.
It suits couples and small groups planning a sushi dinner, and hotel guests who want a serious meal without leaving the property. Diners do not need to be staying at the hotel.
The menu
Edomae-style sushi is the core: nigiri and sashimi by the piece, from tuna through fatty tuna, king salmon and yellowtail, plus sushi and sashimi samplers and cooked dishes. There are separate drink and dessert menus.
Planning dinner
It is open for dinner only. Reservations are encouraged, and tables are booked for a set time by party size, so a group of four has an hour and a half rather than an open-ended evening. Diners get complimentary valet parking at the hotel.
To go and private dining
Makoto To-Go runs Friday through Sunday, for pickup with reserved parking or delivery through Uber Eats, and hotel guests can order to their rooms. A private dining setting seats up to 10.

The hotel's other restaurant is Gessner, a Colorado mountain grill beside Gore Creek.
