Matsuhisa Vail is chef Nobu Matsuhisa's restaurant in Vail Village, opened in 2011 in the Solaris development on East Meadow Drive. The cooking is his new-style Japanese, shaped by classical training in Tokyo and years in Peru and Argentina, so yellowtail sashimi with jalapeño and black cod miso share the table with tiraditos and anticucho-glazed meats.
It is a dinner to plan around: a celebration, a night out for two, or a group that likes to share. Plates come family-style over several courses, which suits a table happy to pass dishes around more than one that wants separate entrées.
The menu and the omakase
Beyond sushi and sashimi, the kitchen covers lamb chops, Miyazaki beef and a good range of vegetarian dishes. The eight-course omakase mixes the Nobu signatures with seasonal plates and is ordered from your server on the night, with a sommelier's wine pairing if you want one. Hokusetsu sake, brewed on Sado Island and poured only in Nobu Matsuhisa restaurants, anchors the sake list, and the bar keeps rare Japanese and domestic whiskeys alongside cocktails such as the Matsutini.
The room
Stone pillars and walls, custom woodwork and a stone fireplace give the dining room a rustic feel, and floor-to-ceiling windows look out to Vail Mountain. In warmer months the front of the restaurant opens onto a patio with fire pits.
Getting a table
Dinner starts at 5 p.m. every night. Reservations open 30 days out, and table times are set by party size, so a lingering four-hour dinner is not on offer. Without a booking, the bar and sushi bar seat walk-ins first come, first served. Takeout can be ordered ahead, and valet parking in the Solaris driveway is complimentary with validation. Private dining and catering
The Nobu Room seats up to 40 and the Mountain View Terrace up to 75, with semi-private banquettes and a fireside lounge for groups of about 14 to 24. All need a pre-ordered menu. Matsuhisa also caters weddings and private events around the valley, including sushi stations and at-home omakase.
In the Solaris building
Matsuhisa is one of several independent businesses in Solaris, the complex that also holds Solaris Residences. Deca + Bol, with its bowling lanes, is also in the building if the evening needs a second stop.
